Fruit was hand harvested in small baskets in cool conditions. After a very gentle pressing the must was fermented in 500L oak barrels at 17 Cº for 14 days.
Fermentation in oak barrels, half of them new and the other half 2 and 3 years old (medium toast.) Left on fermentation lees with occasional stirring and minimal sulphur additions for 7 months.
Light golden straw.
An elegant bouquet of limes, stone fruit and integrated spicy cedar qualities with a touch of gun flint. Elegant and complex.
The attack is rich and refined, the mid palate is powerful and complex with a firm line of natural acidity that provides a backbone to the palate and a platform for the exotic citrus, mineral flavours that linger for a long time.
