    • Alcoholic fermentation: Carried out in 1800 litre tanks with two daily pumping-overs to extract colour and homogenize the mass. Fermentation temperature of 24ºC. Maceration: At least a further 28 days in order to fully extract the colour and aromas. Gentle pressing in a vertical wooden press. Malolactic fermentation: Takes place in 500 litre French oak barrels of medium toast.

    • 15 months in 500 litre barrels in their 1st, 2nd and 3rd year of use, from France’s best coopers.

    colour

    Bright red with purple highlights. Clean and bright.

    aroma

    Various layers of aromas co-exist on the nose: the first sensation is full of fruit – blackberry, forest fruits and cranberries, along with blue fruits such as sloe berries. The next layer reveals liquorice, typical of the varietal, and spices from oak ageing which include cinnamon and vanilla; while the third layer shows delicate floral hints such as rose petals, bringing a great complexity and quality to the whole.

    Flavour

    A creamy, unctuous sensation fills the mouth with an aftertaste of fruit and the very fine tannins of well ripened Tempranillo grapes. The right level of acidity gives it long and honeyed freshness leaving a touch of mint chocolate on the finish.
