Semi carbonic maceration. The grapes are destalked but not crushed so as to avoid breaking the skins. Floating cap with daily pumping-over. Temperature controlled fermentation.
The wine spends at least a month in bottle in our cellars before leaving the winery.
An attractive cherry red tone, clean, with characteristic brightness.
Alongside concentrated fruit essences, the nose evokes the flowers that cover Mediterranean hills in springtime: delicate rockrose, the pervasive aroma of lavender and thyme, yellow flowered broom, fennel and poppies shining brightly in the sun.
Enveloping, flavourful and balanced. Its fine and elegant tannins fill the mouth with a pleasing freshness and taste sensations of charming clarity.
