After a manual selection of the best fruit, a gentle destemming and a partial run of must there is a pre-fermentation maceration for 5 days at 5-7ºC. The alcoholic fermentation takes place at 26-30ºC, with frequent “remontages” and 2 or 3 “delestages”. The post fermentation maceration took 4 weeks and the malolactic fermentation took place in tank.

11 months in new French barrels. The first stage of the ageing process is done with fine lees of MLF and batonage.

Intense and complex, with a mixture of dark fruits (blackberries, cassis, black cherry), liquorice and fine barrel aromas (Virginia tobacco, coffee).

Flavour
Superlative structure with extraordinary concentration and density that gives an elegant finish thanks to its ripe, velvety, fleshy tannins.
