    • Selective harvest, collected in crates of 20 kilos. Selection of fruit by hand on a sorting table. De-stemming and very light crushing, transfer into 8,000 litre stainless steel tanks with refrigerated casings. Maceration for 3-4 days prior to fermentation, and malolactic fermentation in tank at a controlled temperature.

    • Ageing
    • Aged and bottled on the property. Aged in French oak barrels of various sizes (250/600 litres) and toast levels, alternating between different cooperages for 10 months, with at least 6 months in bottle.

    A perfumed wine with notes of black and red fruit, combined with notes of aromatic essential oils, delicate spices and violet flowers.

    On the palate it is rounded with plenty of body. Perfect balance, a wine in which the freshness stands out over the oak. A long, mineral finish making this a wine that pairs well with food.
