After a rigorous monitoring of ripeness, the grapes are harvested by hand in 20 kg crates. Selection of fruit by hand on a sorting table. Very gentle destalking and crushing of the grapes. Four days of cold maceration prior to fermentation, with 20 days maceration in total. Malolactic fermentation in tanks at a controlled temperature.
Aged and bottled on the property. Ageing in French oak during 12 months with at least 10 months in bottle. This careful ageing bestows the wine with a greater complexity and personality, and great intensity of fruit.
Intense red colour
A complex, perfumed wine with notes of black and red fruit, combined with hints of resinous oils, light spices and violets.
On the palate it is rounded, juicy and fresh. A long, fleshy, mineral finish. Perfectly balanced with noticeable elegance.
