    • Selected grapes from vines with an average of 50 to 70 years of age, giving the concentration and noble tannins which provide the structure required for subsequent barrel ageing. Hand harvested. Double selection table, destalked and lightly crushed. Temperature-controlled fermentation. 25-30 days maceration prior to gentle pressing.

    • In French and American oak barrels of 225-litre capacity. 50%-50% during 24 months. Bottle ageing: a minimum of 12 to 18 months.
